Chef&#8217;s Association Food Bank Challenge Cookbook<\/h5>\n<p>Yield: 10 Enchiladas<\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients<\/span>:<\/p>\n<ul>\n<li>2 tablespoons butter or margarine<\/li>\n<li>1 lb. chopped turkey<\/li>\n<li>1 medium onion, finely chopped<\/li>\n<li>1 tablespoon chili powder<\/li>\n<li>2 teaspoons garlic powder<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>1 package whole wheat tortillas<\/li>\n<li>1 can tomato soup<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Directions<\/span>:<\/p>\n<ul>\n<li>Melt butter in a skillet over medium high heat.<\/li>\n<li>Add turkey, and saute until cooked through.<\/li>\n<li>Add onion, and cook until translucent.<\/li>\n<li>Season enchilada filling with chili powder, garlic, salt, and pepper.\u00a0 Cool slightly.<\/li>\n<li>Add about 1\/4 cup or two heaping tablespoons of filling to each tortilla.\u00a0 Roll up the tortillas and place seam side down into a greased baking pan.<\/li>\n<li>Prepare tomato soup according to directions on the can and pour over the enchiladas.<\/li>\n<li>Cover with foil to prevent tortillas from drying out.<\/li>\n<li>Bake at 350 degrees until heated through, about 20-25 minutes.<\/li>\n<li>Serve with a side of spicy smashed peas.<\/li>\n<\/ul>\n<\/div><\/section>\n<\/div><\/div><\/main><!-- close content main element
