Peach Rice Pilaf

Yield: 4 cups

Ingredients:

  • 2 tablespoons margarine
  • 1/2 medium onion, diced
  • 1/2 cup canned peaches, well drained and diced
  • 1 cup rice
  • 2 cups hot water
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions:

  • In a saucepan, heat margarine over medium high heat.
  • Add onion, and saute until soft.
  • Add rice and mix well.
  • Add peaches, and stir to combine.
  • Add water, and bring to a simmer.
  • Season with salt and pepper, cover, and turn burner to low heat.
  • Cook 20-24 minutes or until water is absorbed and rice is soft.
  • Serve with Pan Seared Halibut and Grapefruit Cilantro Butter Sauce.
