Peach Rice Pilaf

Yield: 4 cups
Ingredients:
- 2 tablespoons margarine
- 1/2 medium onion, diced
- 1/2 cup canned peaches, well drained and diced
- 1 cup rice
- 2 cups hot water
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions:
- In a saucepan, heat margarine over medium high heat.
- Add onion, and saute until soft.
- Add rice and mix well.
- Add peaches, and stir to combine.
- Add water, and bring to a simmer.
- Season with salt and pepper, cover, and turn burner to low heat.
- Cook 20-24 minutes or until water is absorbed and rice is soft.
- Serve with Pan Seared Halibut and Grapefruit Cilantro Butter Sauce.
