Grilled Peach Lemon Chicken

Yield: 4 servings

Ingredients:

  • 1 lb. bag stuffing mix
  • 1 1/2 cups peach syrup
  • 1 1/2 cups water
  • 4 chicken breasts
  • 1/2 cup onion, chopped
  • 1/2 cup green bell pepper, sliced
  • 1/2 cup celery, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon cayenne pepper
  • 1 tablespoon butter
  • Lemon and peach slices for garnish

Directions:

  • Heat grill.
  • Soak chicken in peach syrup.
  • Grill green pepper strips with chicken.
  • Heat olive oil in a saucepan.  Add celery and onions, and cook until onions are translucent.
  • Add water and butter to celery and onions.  Bring to a boil.
  • Add stuffing mix, and stir well.
  • Cut the chicken into 1/4-inch strips.  Place chicken, stuffing, and green peppers on a plate and garnish as desired.
