Grilled Peach Lemon Chicken

Yield: 4 servings
Ingredients:
- 1 lb. bag stuffing mix
- 1 1/2 cups peach syrup
- 1 1/2 cups water
- 4 chicken breasts
- 1/2 cup onion, chopped
- 1/2 cup green bell pepper, sliced
- 1/2 cup celery, chopped
- 2 tablespoons lemon juice
- 1 tablespoon cayenne pepper
- 1 tablespoon butter
- Lemon and peach slices for garnish
Directions:
- Heat grill.
- Soak chicken in peach syrup.
- Grill green pepper strips with chicken.
- Heat olive oil in a saucepan. Add celery and onions, and cook until onions are translucent.
- Add water and butter to celery and onions. Bring to a boil.
- Add stuffing mix, and stir well.
- Cut the chicken into 1/4-inch strips. Place chicken, stuffing, and green peppers on a plate and garnish as desired.
