Meat Loaf

Yield: 4 servings

Ingredients:

  • 1 lb. ground beef
  • 1/2 cup cooked rice
  • 1 medium onion, diced
  • 2 eggs, lightly beaten
  • Salt and pepper to taste

Directions:

  • Preheat oven to 350 degrees.
  • In a bowl, mix ground beef, cooked rice, onion, and eggs with salt and pepper to taste.
  • Form into a roll or loaf, and bake in a Pyrex dish covered with foil for 25-30 minutes.
