Serves 4 with Leftovers
From the Toolbox:
- 9″ x 13′ baking or roasting pan
- Kitchen String
- Paper Towels
- Paring Knife
- Cutting Board
Ingredients:
- Non-stick cooking spray
- 1 medium whole chicken
- 1 to 2 Tbs olive oil
- Salt and pepper
Directions:
- Preheat the oven to 425 degrees F.
- Pat the outside of the chicken dry with paper towels.
- Tie the drumsticks together with kitchen string.
- Cover the outside of the chicken with the olive oil, rubbing in the oil with your hands or a pastry brush. Season with salt and pepper.
- Lightly coat the roasting pan with cooking spray. Place the chicken into the roasting pan.
- Place the chicken in the oven and roast for 20 minutes. Reduce heat to 350 degrees F. Continue roasting until the interior temperature reaches 165 degrees F.
- Remove the chicken from the oven and let rest for twenty minutes.
