Serves 4 with Leftovers

From the Toolbox:

  • 9″ x 13′ baking or roasting pan
  • Kitchen String
  • Paper Towels
  • Paring Knife
  • Cutting Board

Ingredients:

  • Non-stick cooking spray
  • 1 medium whole chicken
  • 1 to 2 Tbs olive oil
  • Salt and pepper

Directions:

  • Preheat the oven to 425 degrees F.
  • Pat the outside of the chicken dry with paper towels.
  • Tie the drumsticks together with kitchen string.
  • Cover the outside of the chicken with the olive oil, rubbing in the oil with your hands or a pastry brush. Season with salt and pepper.
  • Lightly coat the roasting pan with cooking spray. Place the chicken into the roasting pan.
  • Place the chicken in the oven and roast for 20 minutes. Reduce heat to 350 degrees F. Continue roasting until the interior temperature reaches 165 degrees F.
  • Remove the chicken from the oven and let rest for twenty minutes.
