Potato and Veggie Packets

Yield: 4-6 servings

Ingredients:

  • 4 potatoes, peeled and diced
  • 1/2 onion, diced
  • 1 yellow squash, sliced
  • 1 tablespoon butter, cut into pieces

Directions:

  • Peel and dice the potatoes.  Cut each potato into 6-8 pieces.
  • Dice the onion and slice the squash.
  • Mix the vegetables together, and place on a sheet of foil.  Top with butter.
  • Fold the foil into a packet; cook on a grill or in the oven for about 15-20 minutes or until tender.
  • Note: add any of your favorite vegetables and seasonings.
