Cranberry Butter Bars

Yield: 16 bars

Ingredients:

  • Crust:
  • 1 1/3 cups all purpose flour
  • 1/4 cup sugar
  • 1/2 cup margarine
  • Filling:
  • 3/4 cup sugar
  • 2 eggs
  • 2 tablespoons flour
  • 1/4 teaspoon baking powder
  • 3 tablespoons cranberry concentrate

Directions:

  • Preheat oven to 350 degrees.
  • In a small bowl, combine all crust ingredients.  Mix until crumbly.
  • Press crust into the bottom of an 8″ square baking pan.
  • Bake for 15-20 minutes.
  • In another bowl, combine all filling ingredients.  Mix well, and pour over hot crust.
  • Continue baking for 18-20 minutes or until filling is set.
  • Sprinkle with powdered sugar or regular sugar and cool.
