Smoked Salmon Frittata

Yield: 8 servings
Ingredients:
- 7 eggs (or 16 oz. egg substute)
- 4 oz. smoked salmon, diced
- 4 tablespoons onion or green onion, diced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions:
- Whisk together eggs, salt, and pepper in a large bowl. Stir in salmon and onions.
- Coat a large ovenproof skillet with cooking spray or a small amount of butter, and set pan over medium heat.
- When pan is hot, add egg mixture and cook until mostly set but still runny on the surface, about 5-6 minutes.
- While cooking frequently lift mixture from the sides of the pan using a spatula to allow the uncooked eggs to run to the bottom.
- Place skillet under broiler until golden on top, about 1-2 minutes.
- Slice into 8 wedges and serve.
