Carnitas Macaroni Casserole

Yield: 4-5 servings
Ingredients:
- 1 box macaroni and cheese
- 1 medium onion
- 2 tablespoons vegetable oil
- 1 lb. carnitas (shredded cooked pork)
- 15 oz. can spaghetti sauce
- 14.5 oz can diced tomatoes
Directions:
- Prepare macaroni and cheese per instructions on the box. Keep warm.
- Dice onion, and sauté in vegetable oil over medium high heat in a large fry pan.
- Add carnitas to onion, and mix to combine.
- Add spaghetti sauce and diced tomatoes to carnitas, and mix to combine. Heat thoroughly.
- Add prepared macaroni and cheese, and mix to combine.
- Heat casserole thoroughly, and serve.
