Carnitas Macaroni Casserole

Yield: 4-5 servings

Ingredients:

  • 1 box macaroni and cheese
  • 1 medium onion
  • 2 tablespoons vegetable oil
  • 1 lb. carnitas (shredded cooked pork)
  • 15 oz. can spaghetti sauce
  • 14.5 oz can diced tomatoes

Directions:

  • Prepare macaroni and cheese per instructions on the box.  Keep warm.
  • Dice onion, and sauté in vegetable oil over medium high heat in a large fry pan.
  • Add carnitas to onion, and mix to combine.
  • Add spaghetti sauce and diced tomatoes to carnitas, and mix to combine.  Heat thoroughly.
  • Add prepared macaroni and cheese, and mix to combine.
  • Heat casserole thoroughly, and serve.
