Blue Chicken Rounds

Yield: 1, Portion Size 2 Rounds
Ingredients:
- 2 chicken breasts
- 2 slices whole wheat bread
- 2 cloves garlic
- 1/2 cup onion
- 1/2 cup green bell pepper
- 1/4 cup blue cheese
- 1 leaf basil
Directions:
- Slice chicken, onion, and bell pepper into strips. Mince garlic.
- Sauté chicken breast until golden brown; add bell pepper, onion, and garlic.
- Toast or broil bread and cut into rounds.
- Place chicken and vegetable mixture on toast rounds; sprinkle with blue cheese.
- Roll and chop the basil leaf and sprinkle on top as garnish.
