Blue Chicken Rounds

Yield: 1, Portion Size 2 Rounds

Ingredients:

  • 2 chicken breasts
  • 2 slices whole wheat bread
  • 2 cloves garlic
  • 1/2 cup onion
  • 1/2 cup green bell pepper
  • 1/4 cup blue cheese
  • 1 leaf basil

Directions:

  • Slice chicken, onion, and bell pepper into strips.  Mince garlic.
  • Sauté chicken breast until golden brown; add bell pepper, onion, and garlic.
  • Toast or broil bread and cut into rounds.
  • Place chicken and vegetable mixture on toast rounds; sprinkle with blue cheese.
  • Roll and chop the basil leaf and sprinkle on top as garnish.
