Sautéed Beef and Corn Lettuce Wraps

Yield: 4 Servings

Ingredients:

  • 2 tablespoons oil
  • 3 eggs
  • 1 lb. sirloin beef pieces
  • 8 Romaine lettuce leaves
  • 1 onion
  • 6 oz. package corn
  • soy sauce

Directions:

  • Scramble eggs and chop.
  • Heat oil in pan and sauté beef pieces.  Finish with soy sauce, onions, and corn.
  • Place beef mixture in lettuce leaves.  Garnish with chopped scrambled eggs.
  • Roll leaves and serve.
