Potato and Veggie Packets

Yield: 4-6 servings
Ingredients:
- 4 potatoes, peeled and diced
- 1/2 onion, diced
- 1 yellow squash, sliced
- 1 tablespoon butter, cut into pieces
Directions:
- Peel and dice the potatoes. Cut each potato into 6-8 pieces.
- Dice the onion and slice the squash.
- Mix the vegetables together, and place on a sheet of foil. Top with butter.
- Fold the foil into a packet; cook on a grill or in the oven for about 15-20 minutes or until tender.
- Note: add any of your favorite vegetables and seasonings.
