Smoked Salmon Frittata

Yield: 8 servings

Ingredients:

  • 7 eggs (or 16 oz. egg substute)
  • 4 oz. smoked salmon, diced
  • 4 tablespoons onion or green onion, diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions:

  • Whisk together eggs, salt, and pepper in a large bowl.  Stir in salmon and onions.
  • Coat a large ovenproof skillet with cooking spray or a small amount of butter, and set pan over medium heat.
  • When pan is hot, add egg mixture and cook until mostly set but still runny on the surface, about 5-6 minutes.
  • While cooking frequently lift mixture from the sides of the pan using a spatula to allow the uncooked eggs to run to the bottom.
  • Place skillet under broiler until golden on top, about 1-2 minutes.
  • Slice into 8 wedges and serve.
