Meat Loaf

Yield: 4 servings
Ingredients:
- 1 lb. ground beef
- 1/2 cup cooked rice
- 1 medium onion, diced
- 2 eggs, lightly beaten
- Salt and pepper to taste
Directions:
- Preheat oven to 350 degrees.
- In a bowl, mix ground beef, cooked rice, onion, and eggs with salt and pepper to taste.
- Form into a roll or loaf, and bake in a Pyrex dish covered with foil for 25-30 minutes.
