Herb Potato Roasted Fillet of Salmon atop Autumn Greens and Beans

Yield: 4 servings

Ingredients:

  • 4 x 5 oz. salmon fillets
  • 1 cup pre-made instant mashed potatoes
  • 1 teaspoon Italian herb blend
  • 2 cups precooked white beans
  • 1 cup canned mustard greens, drained
  • 4 cups canned diced tomatoes
  • Salt and pepper

Directions:

  • Preheat oven to 350 degrees.
  • In a bowl, combine the instant mashed potatoes and the Italian herb blend.  Mix well.
  • Place 1/4 cup of the prepared potato herb mixture onto each salmon fillet.
  • In a saucepan, bring the beans, greens, and tomatoes to a simmer over medium heat.  Season to taste with salt and pepper.
  • Bake the salmon in the oven for 15-20 minutes.  The salmon is done when it flakes and is cooked through.
  • Place the salmon atop the Autumn Beans and Greens to serve.
