Herb Potato Roasted Fillet of Salmon atop Autumn Greens and Beans

Yield: 4 servings
Ingredients:
- 4 x 5 oz. salmon fillets
- 1 cup pre-made instant mashed potatoes
- 1 teaspoon Italian herb blend
- 2 cups precooked white beans
- 1 cup canned mustard greens, drained
- 4 cups canned diced tomatoes
- Salt and pepper
Directions:
- Preheat oven to 350 degrees.
- In a bowl, combine the instant mashed potatoes and the Italian herb blend. Mix well.
- Place 1/4 cup of the prepared potato herb mixture onto each salmon fillet.
- In a saucepan, bring the beans, greens, and tomatoes to a simmer over medium heat. Season to taste with salt and pepper.
- Bake the salmon in the oven for 15-20 minutes. The salmon is done when it flakes and is cooked through.
- Place the salmon atop the Autumn Beans and Greens to serve.
