Tamale Casserole

Yield: 8×12 pan

Ingredients:

  • 1/2 lb. link sausage
  • 1 1/2 lb. ground beef
  • 1 large onion, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup milk
  • 1 can corn, drained
  • 15 oz. can tomato sauce
  • 1/2 cup cornmeal
  • 1 small can sliced olives, drained
  • 1 cup cheddar cheese, grated

Directions:

  • Preheat oven to 325 degrees.
  • Brown sausage, and drain.
  • Add ground beef and onion, and brown.
  • Add seasoning, corn, tomato sauce, and milk.  Simmer 20 minutes.
  • Stir in cornmeal.  Add olives, and pour into a casserole.  Top with cheese.
  • Bake for 40 minutes.
